Banana Pancakes
Ingredients
3 Green Banana's (lower in sugar)
2 Tbsp Coconut Oil
4 Eggs, separated
1/2 tsp Vanilla
1/2 tsp Cinnamon
Grass-fed butter and maple syrup for topping the cake
Instructions
1. In a food processor or blender, puree bananas, coconut oil, egg yolks, vanilla, and cinnamon. 2. In a separate bowl beat the egg whites until stiff peaks form (this makes the pancakes fluffy). 3. Fold all ingredients together. 4. Heat butter in a skillet over medium heat until the butter starts to bubble, then pour pancake batter into pan. 5. Shape your cakes into anything you want! 6. Cook for about 2-3 mins per side, then flip. 7. Smother with butter and real maple syrup!
Butternut Squash String Fries
Ingredients
1 butternut squash
1 tablespoon olive oil or coconut oil
sea salt to taste
Instructions
Preheat the oven to 400 degrees
Peel and wash butternut squash and cut into long thin strips (like French fries)
The thinner the better (thinner = crispier)
Toss squash in a bowl with oil and salt, distributing evenly
Place fries onto a greased cookie sheet or a Silpat spaced 1/4 inch apart
Bake for 15 minutes in the oven
Flip fries when time goes off and place in the oven for another 15 minutes
Enjoy!
Choco-Choco Dip
Ingredients
2 avocados
1 banana
1/2 cup raw honey
1/4 cup fair trade organic cocoa powder
2 Tbsp coconut oil
Pinch of sea salt
Instructions
Throw all ingredients into a food processor and process until smooth and creamy, like a chocolate pudding.
Top with coconut, stevia sweetened yogurt
Serve this great Choco-Choco Chocolate Avocado Fruit Dip with fruit.
